Mandazi and Bharazi is a very popular dish in East Africa. Typically this dish is prepared and served in small restaurants. It is also very common for local street vendors to prepare and sell this dish. But why this dish is so important to me is because when I was growing up, I used to eat this dish very often. It is one of my favorite dish actually. I love the combination. Mandazi are these little cute East-African donuts and they are served with Bharazi, which is a savoury coconut bean curry. Absolutely mouth watering combination. If you love sweet and savoury dishes, this is perfect blend to try out. My mom's best friend used to make mandazis at home and then she would send them over to my home. Since all of us loved her mandazis, the supply only lasted a few days. My mom followed her recipe at home and made some more for all of us. Since this dish is very close to my heart and I hold so many fond memories from my childhood, I would love to share this recipe with you all. If you love donuts and a curry with coconut flavor, you will love this dish. It is a must try. On the side note, mandazis are usually triangle shaped. However, last night when I prepared this dish for the first time, I made my donuts into a variety of different shapes to keep the excitement going. :D They are also fried, but I tried the recipe with a different twist. I baked my East African donuts for a healthier alternative. Whatever you prefer, the choices are unlimited. :) Similarly, Bharazi is made with pigeon peas, but I used black eyed beans last night. The dish turned out delicious. As long as the gravy is good and consistent, you can add your favorite type of beans. :)

Recipe for Mandazi:
Ingredients:
1. 1/2 cup milk
2. 1/2 cup sugar
3. 2 tbsp melted butter
4. 2 cups all-purpose flour
5. 1 egg beaten
6. 2 tsp. baking powder
Note: This recipe does not use active yeast. This is a very simple recipe to follow and can be prepared quickly.
Procedure:
1. Make sure all the ingredients are at room temperature first. Then, mix all the ingredients thoroughly. Once they are mixed, add flour little by little, but make sure that the dough is not sticky. The goal should be to make it soft, but NOT sticky.
2. Once the dough is prepared, on a circular baking pan, make a big round circle, 1/4 inch tick, and then cut into small shapes.
3. Pre-heat oven on 350 degrees and bake for 8-10 minutes until the donuts are lightly brown. Do not make them over brown.
4. Serve hot.
Recipe for Bharazi:
Ingredients:
1. 1 cup of cooked black eyed beans
2. 1 can of coconut milk
3. Salt to taste
4. Chilli powder to taste
5. Turmeric powder to taste
6. Fresh lemon juice to taste
7. 1/2 cup of water
8. 2 tsp of oil
9. Cumin powder to taste
Procedure:
1. Heat oil in a pan, add cooked black eyed beans, add 1 can of coconut milk. Let it boil.
2. Add salt, chilli, turmeric, and cumin powder to taste, and fresh lemon juice. Let it boil.
3. Reduce temperature and let it cook for 15 minutes on low heat.
4. Serve hot.
