Masala Egg Curry is a flavorful and delicious dish. It is a perfect dish to make for a cold day. There are many different styles used to prepare this dish. But today I am sharing with you all the dish that I have been eating since childhood. What is very unique about this dish is the way it is prepared. It uses simple ingredients and spices. But it does not use any heavy cream or yogurt. Another point about my recipe is that it includes potatoes. Many egg curry dishes that you order in a restaurant just offer curry with eggs only. But my recipe is a combination of eggs and potatoes. My Masala Egg Curry recipe is simple to follow and prepare, and very tasty. For all you of you that love eggs, give this Masala Egg Curry recipe a try. You will simply love it. I have incorporated some common Indian spices and ingredients in this curry dish. And as always, I have a personal story to share with each one of my recipe. As I take a flashback down memory lane, I have a very special story that comes to mind. A story that I would like to share with you all. During my childhood years in Dar-Es-Salaam, we lived in the City Center. Every early Saturday morning, a very special lady would come to deliver farm fresh cage-free eggs to our doorstep. We only bought eggs from her because she sold the best eggs in town. I would make an extra effort to get up in the morning when she rang the doorbell. For some, getting up at 8am on a Saturday morning is rather a daunting task. But for me, it was a perfect start to my day. A sense of excitement and joy led to a natural wake-up call every Saturday morning. I would get so excited when I would hear her loud voice. She would scream "mayai mayai mayai", which means eggs in English. I would jump out of bed and run outside and buy some farm fresh eggs immediately. Then after, I would convince my mom to make her unique and delicious Masala Egg Curry dish, which I have now learned to mastered as well. I am about to share with you all this very special recipe. A recipe that I have mastered to perfection. When family and friends come over, they notify me in advance to prepare this dish for them. :) For those of you who are vegetarians, this dish provides you with a complete protein source. It contains lots of onions and garlic, which makes this dish even more flavorful and rich. So simple to make and serve. Prepare this dish at your next dinner party. :)
Here is the recipe for you all to follow:
Ingredients:
1. 5 Boiled and peeled eggs - cut each egg in the middle to create two pieces, repeat with all the remaining eggs.
2. 2 Small boiled potatoes cut into medium sized pieces
3. 1 Fresh tomato
4. 3 Garlic cloves
5. 1 tsp of ginger
6. Salt to taste
7. Chilli powder to taste
8. Turmeric powder to taste
9. 1/2 onion chopped into small pieces
10. 1-2 tsp of garam masala
11. Pinch of kasuri methi
12. Pinch of hing (Asafetida)
13. 2 Tbsp of tomato paste
14. 3 small green chillies chopped and blended
15. 2 Tbsp of olive or grapeseed oil
Procedure:
1. Heat oil on medium temperature, add hing. After hing starts to cook a little, add onions. Sauté the onions for 5 mins until lightly brown. The key is to close the lid to make the onions cook faster and well.
2. Add kasuri methi. On the side, blend one fresh tomato (cut into pieces), 3 cloves of garlic, and chopped green chillies in a blender.
3. Once the tomato mixture is completely blended, add it to the oil, cook on medium temperature for 10 mins, add salt, chilli and turmeric powder, garam masala, ginger, and tomato paste. Stir for another 10 mins on medium heat.
4. Once the gravy is prepared, add the cut boiled potatoes and eggs into the gravy.
5. Simmer the gravy for 15-20 mins on low temperature.
6. Garnish with chopped coriander leaves.
7. Serve hot with a side of fresh jeera rice.
