We all love soups. At least in my family everyone is a big fan of soups. I love to make all different kinds of soups and love combining two vegetables that make the most perfect soup blend. But my most favorite is the soup I have grown up with, that is my mom's homemade tomato soup. There are so many tomato soup recipes on the Internet and obviously every recipe has a slight variation, but this soup recipe always turns out so delicious. I end up having 2-3 bowls. :) You should definitely try this recipe out, especially right now when the time is just perfect. On a cold rainy/snowy day, a bowl of soup cures everything. The big plus point is that this recipe is very easy to follow.
So here's the recipe for you all to try! I hope this soup recipe gets added to your favorite recipe list. :)
Ingredients:
1. 5-6 ripe tomatoes
2. Salt to taste
3. 1 tbsp ghee
4. 1 tsp of graham flour
5. Pinch of cumin seeds
6. Pinch of hing
7. 2-3 curry leaves
8. 1/2 tsp of sugar (optional)
9. Black pepper to taste
10. Little water for pressure cooker
Procedure:
1. Gather and wash 5-6 ripe tomatoes.
2. Cut the tomatoes into half and place in pressure cooker with a little bit of water.
3. Once the tomatoes are pressure cooked, take them out and place them in a blender once cool. Add 1 tsp of graham flour to the tomato mixture and blend on high speed for 30-40 seconds.
4. Once the mixture is evened out, strain the liquid using a strainer so that the tomato skin and leftover can be removed. You should just be left with the thickened liquid. By adding graham flour, you will get a nice creamy thick texture.
5. In a pan, put 1 tbsp of ghee, add cumin seeds and hing. Once the cumin seeds start to crack, add curry leaves, and tomato soup mixture. On medium temperature, let it shimmer, add salt, sugar (optional) and black pepper. Let it boil.
6. Once boiled properly, serve hot!
