Do you like pizza? What about pizza with a unique twist? This authentic recipe is my mom's. In Dar-Es-Salaam, she used to prepare Sweet Corn Pizzas for us kids. My brothers and I loved this dish because it had so much flavor and yet, it was very simple to make. The best part about this dish is that it is quite filling because it has cheese and cream of corn, creating a creamy yummy texture. I love this recipe because it doesn't require a pizza crust. Instead, the sweet corn pizza is made on a slice of bread! Here in North America, I use organic sprouted bread. But if sprouted bread is not available in your hometown, you can simply use white or whole wheat bread. :)
Here is a recipe for a quick lunch fix. It won't consume much of your time, but it will surely create a satisfying appetite and you now have one more addition to your pizza family. Hope you enjoy this very special dish as much as I do. :) I always thank my mom for teaching me how to make this dish because when I have a busy schedule ahead of me, I can always make this dish very quickly. It works out to be a win win situation. I can get my work done productively. :)
Recipe for Sweet Corn Pizzas
Ingredients:
1. 5-6 slices of bread - sprouted, whole wheat, or white
2. 1 can of cream of corn
3. 1 green or red pepper/capsicum - chopped into small pieces
4. 1/2 onion chopped into small pieces
5. 1.5 cups of grated cheese
6. 1/2 cup of milk
7. Salt to taste
8. Black pepper to taste
9. 2 tsp of oil
Procedure:
1. Heat oil in pan. Saute onion and green/red pepper. Once a little soft, add 1 can of cream of corn to the pan.
2. Let the cream of corn boil, add milk and 1 tbsp of grated cheese to the mixture so that it thickens. Add salt and pepper.
3. Once the mixture starts boiling, reduce heat and let it simmer on low temperature.
4. Let the mixture cool down.
5. Take one slice of bread, spread the cream of sweet corn mixture, sprinkle grated cheese, and place it in the oven or toaster oven. Repeat the process again for the remaining slices of bread.
6. Bake on 375 for 10 minutes until the base of the bread has become crispy.
7. Serve hot and simply enjoy!
